I do agree it's relatively proper to use "kinesis" to denote abilities which affect known energy and matter, but thought you might like a few more suggestions on what may be affected with PK:
EMR (electromagnetic radiation, including visible light).
Kinetic energy: controlling the amount of kinetic energy in an object can be used to create heat, or vibration. This is the fire-starting ability.
Matter (of course, all forms of matter. It does seem that people tend to have affinities for certain states of matter, and fire manipulation may fall into the category of plasma-affecting PK).
Electricity
Magnetism
Momentum
Time (This ability seems to enable a person to interfere with the time/work/energy equation, allowing more work to be done in the same amount of time for less energy...traveling a greater distance than one should be able to in the same period of time without noticeable increase in speed, for example...it's quite odd, particularly since outside observers apparently do not detect it).
Gravity
One thing I see here that I'm fairly sure I've never seen elsewhere is "umbrakinesis"...I believe this is a somewhat fallacious ability. Obviously, a shadow is not a thing at all, it's merely an effect. Manipulating a shadow would require no more and no less than manipulating light. That's the only way it could be done, making a seperate term for this ability redundant.
All of the known -kinesis abilities can be placed into one of the above categories. I believe it's quite useful to understand precisely what may be affected in each case, and can speed the time it takes a person to learn to control a given ability.
